Mmm…Thanksgiving Time & Pumkpin Muffins

Posted on November 17, 2010

I love this time of year! The trees in my backyard are almost barren, the river is dried up, the air has that crisp cool smell and feel. Thanksgiving is a week away and I can taste my moms juicy turkey, soft rolls and delicious stuffing. The smell of Pumkin Spice is flooding from every room in my home. I can’t help it, it makes me hungry! Maybe that’s because I am 4 months pregnant, or maybe it’s just because this time of year is all about food and family!

In honor of the holiday season I decided to kick it off with some whole wheat pumpkin muffins.

I know, made you drool didn’t I?
Here is the awesome recipe!

Preheat oven to 375 degrees

2 cups flour
2 cups whole wheat flour
4 tsp baking powder
1/2 tsp baking soda
4 tsp pumpkin spice
1/4 tsp salt
2 eggs
2 cups milk
1/2 cup melted margarine
2 cups brown sugar
1-16oz can Pumpkin (1 1/2 cups)

Melt margarine and beat in eggs, milk and pumpkin. Stir in dry ingredients until moistened.

Spoon into muffin cups(full)
Bake 25 minutes

*I love to add things to this. Leftover over ripe Bananas, some cream cheese, applesauce etc.)*
If you make them let me know what you think!

Meet Tyson and Michelle.

One of the most down to earth couples I have ever had the privilege of working with.

You may remember Michelle from the post here. The girl who braved swarms of millions of mosquitoes for her bridals. :)

On their beautiful, bright wedding day we braved the noon sun for a few quick shots,

before heading down to the Salt Lake City Capitol Building. If ever there were a place with the most stunning light, this would be it! Just flooding with skylight warmth. I could have shot there all day. It is absolutely dreamy.

And of course, the new Mr. & Mrs. can’t be left alone too long ;)

You two are absolutely, beautifully, fiercely, in love….

It was then off to the backyard reception! A very toasty 97 degrees day I might add!

Coolest idea ever! Yes, I know it’s not the first time it’s ever been done, but the photobooth was AWESOME! I seriously want one in my living room. Seriously.

Tyson and Michelle, you even make cake eating melt my heart…

No words are needed here. Just some of those most tender and beautiful moments.

The night ended beautifully. Tyson sang to his new bride…

Then it was dancing until way beyond dark…

Four and a half years ago I met an amazing chiropractor, Dr Bruce Nielson, who has changed my life in more ways than I could ever thank him enough for.  I began seeing him after I was hit head on by a pizza delivery boy.  To make a long story short, I had lost my ability to enjoy any single day in my life. I was plagued with pain from my neck down through my spine and daily migraines.  There were days so bad I could not even get up to get my little newborn baby boy to nurse. I had to have him brought to me. Doc worked his magic and has given me the ability to have a life again. To function and enjoy my life and my family. Even more than that, I began using him for his naturalistic healing.  When 2 years had passed since the birth of my son and I had had my 4th miscarriage I had all but given up. Until I talked to him.  With his help 3 months later I conceived and carried full term my little Lillie. And once again this year, after my 7th miscarriage, I went to him again. Here I am 15 weeks pregnant with my 4th child. Miracle worker? I would most definitely say so.  I get teary eyed just thinking of how grateful I am for Doctor Nielson and his care he has given me.  It isn’t often you come across someone so dedicated and passionate about what they do. He is truly gifted in his ability to heal.

So if you ever need an amazing chiropractor/kinesiologist I highly, HIGHLY recommend him!

Now, on to his awesome family! Every now and then I get a chance to spend time with amazing people.  People who remind me of things long forgotten. This  gorgeous family was a total flashback to my years growing up. I loved every second of it! We had so much fun we shot until the very last ray of light came through the trees and I still could have kept going!

It’s not hard to see where these gorgeous kids came from.

These handsome boys had me rolling. They reminded SO much of my older brothers.  Which of course made it easy for me to get what I wanted out of them ;)

And then there is little Miss Chloe.  Really no words are needed, but I will give you one.

I know right?

Seriously, I had too much fun!

What else would you expect from a bunch of boys??

There is just something about little girls, they really are Sugar & Spice

As always, I have to end with the laughter!
